Watermelon Water Ice

Yo! Love the refreshing idea of water ice but not the sugar and artificial colors and flavors? This easy-to-make version is completely yummy and you don’t have to leave the house to get it!
Makes 4-5 servings
Ingredient List:
- 24 ounces seeded watermelon
- ½ cup brown rice syrup
- 1 tablespoon fresh lemon juice
- Lemon slices, for garnish
Step By Step Instructions:
Place watermelon in a blender and puree until smooth. Add lemon juice and rice syrup and blend to combine. Transfer mixture a large freezer container and freeze. Using a fork, stir the mixture every 30 minutes until it is frozen, about 3 times. Once frozen, rake the water ice until it is loose and coarse, like rock salt. Keep frozen until ready to serve.
To serve, scoop into individual bowls and garnish with lemon slices or fresh berries
Cook’s Tip: You can vary the flavors of the water ice, by simply varying the fruit…24 ounces of berries, cantaloupe, peaches, cherries…all will make lovely water ice.
