- Extra virgin olive oil
- ½ dried chili pepper, seeded, finely minced
- 1 red onion, thin half-moon slices
- Sea salt
- 1 bunch collard greens, rinsed, thinly sliced
- 1 lemon, quartered
Step By Step Instructions:
Place a small amount of oil, chili and onion in a skillet over medium heat. When the onions begin to sizzle, add a pinch of salt and sauté until translucent, about 2-3 minutes. Add collards, season lightly with salt and cook, stirring, until the greens are just limp and a rich, deep green. Serve with lemon wedges to aid the body in digesting the oil.
