Spicy Sautéed Collard Greens
A quick dish that will have you falling in love with greens. And you should! Greens provide us with just about every bit of nutrition we need, from vitamins and minerals to protein. And delicious? This dish will have them coming back for more.
- Extra virgin olive oil
- ½ dried chili pepper, seeded, finely minced
- 1 red onion, thin half-moon slices
- Sea salt
- 1 bunch collard greens, rinsed, thinly sliced
- 1 lemon, quartered
Step By Step Instructions:
Place a small amount of oil, chili and onion in a skillet over medium heat. When the onions begin to sizzle, add a pinch of salt and sauté until translucent, about 2-3 minutes. Add collards, season lightly with salt and cook, stirring, until the greens are just limp and a rich, deep green. Serve with lemon wedges to aid the body in digesting the oil.
