Roasted Potatoes

Nothing beats roasted potatoes...absolutely nothing.

Makes 4-5 servings.

Ingredient List: 
1 pound fingerling potatoes, halved
Sea salt
1-2 sprigs fresh rosemary, minced
Step By Step Instructions: 
Preheat oven to 350°. Place halved potatoes in a mixing bowl and drizzle generously with oil. Sprinkle with salt and rosemary to taste and toss to coat. Arrange potatoes in a glass baking dish or sheet pan, avoiding overlap. Roast uncovered until tender and lightly browned, about 1 hour.
Cook's Tip: Most often, when I roast potatoes, I use rosemary as a seasoning but in this recipe, I think it competes with the flavor in them mushroom dish.
