Red and Green Cabbage Salad

A simple marinated salad that is delicious served warm or chilled. The easy miso marinade is complemented by the nutty flavor of the caraway seeds.

Makes 4-6 Servings

Ingredient List:

  • ½ head green cabbage, finely shredded
  • ¼ head red cabbage, finely shredded
  • About 2 tablespoons caraway seed

Marinade

  • 3 tablespoons light sesame oil
  • 3 tablespoons spring or filtered water
  • 3 tablespoons white miso
  • 2 teaspoons brown rice vinegar
  • 2 tablespoons brown rice syrup

Step By Step Instructions:

Bring a pot of water to a rolling boil. Add green cabbage and cook until just tender, about 3 minutes. Remove with a slotted spoon and place in a bowl. Add red cabbage to boiling water and cook until just tender, about 3 minutes. Drain, add to green cabbage and toss with caraway seed.

To make the marinade: Whisk together all ingredients until blended. Toss with warm cabbage and allow to marinate, tossing occasionally, about 15 minutes before serving.
