Pureed Butternut Squash
The perfect side dish when you want something that seems special but was easy to pull together.
Makes 2-3 servings
- ½ medium butternut squash, seeded, peeled, large dice
- Pinch sea salt
- Generous pinch ground cinnamon
Step By Step Instructions:
Place diced squash in a steamer basket in a pan of water. Do not let the water hit the bottom of the steamer. Sprinkle with salt and cinnamon. Bring to a boil and cook, covered, til the squash is soft enough to puree, 10-12 minutes.
When the squash is tender, carefully remove the steamer basket and transfer the squash to a small mixing bowl. Using a fork, mash the squash into a chunky puree. Serve garnished with toasted nuts, pomegranate seeds or toasted seeds.
