Pressure Cooked Brown Rice

Makes 2-3 Servings

Ingredient List:

  • 1 cup short grain brown rice, rinsed well, soaked for at least 1 hour, up to 8 hours*
  • 1 ½ cups spring or filtered water
  • Sea salt
  • ½ cup lightly toasted pine nuts

Step By Step Instructions:

Drain and discard soaking water from rice. Place rice and water in a pressure cooker and bring to a boil. Add a pinch of salt and seal lid. Bring to full pressure over medium heat. When pressure is high, reduce heat to low and cook rice for 25 minutes. Turn off heat and allow rice to stand in pressure cooker for 25 minutes more. Remove lid and transfer rice to a bowl. Serve garnished with toasted pine nuts.

COOK’S TIP: Soaking brown rice before cooking helps to rid it of a substance called ‘phytic acid’, which can inhibit your body’s ability to efficiently use calcium. Soaking and discarding the soaking water eliminates that risk.

If you do not have a pressure cooker, get one. Seriously, get one, but in the meantime, you can boil the rice with 2 parts water to one part rice and cook for 50 minutes. Then proceed with the recipe as stated.
