Peanut Butter Bombs

These are the greatest treat under the sun…if you like the combination of chocolate and peanut butter…and who doesn’t?

Makes 17-20 pieces

Ingredient List:

  • 1 cup organic or valencia peanut butter
  • 4 tablespoons brown rice syrup
  • Pinch sea salt
  • 1 teaspoon pure vanilla extract
  • ¼ cup cacao nibs
  • 2 cups dark chocolate chips

Step By Step Instructions:

Place peanut butter, syrup, salt and vanilla in a saucepan over low heat. Cook, stirring until the mixture seizes into a soft ‘ball.’ Remove from heat and fold in nibs. Scoop by tablespoons onto a parchment-lined sheet tray and set aside.

Temper the chocolate: Melt 1 ½ cups chocolate in a double boiler or in a glass bowl over a pan of boiling water and stir until chocolate melts and reaches 119o. Remove from heat and place on a dry towel (do not let water hit the chocolate) and dry the bottom of the bowl. Stir in remaining chocolate until the temperature reduces to 86o. Stir until smooth. Return the bowl over the boiling water and stir for 5 seconds. Remove to the towel and dry the bottom.

Spoon chocolate over each peanut butter mound and chill until the chocolate sets.
