Mochi Melt

The quickest and most delicious one-pot meal ever created!
Makes 2-3 servings
Ingredient List:
- Avocado oil
- ½ yellow or red onion, diced
- Organic soy sauce
- 1 carrot, diced
- ¼ head green cabbage, shredded
- 1 cup diced daikon
- 1 pound seitan, sliced
- 1 cup frozen organic corn
- ½ package mochi, thinly sliced
Step By Step Instructions:
Place oil and onion in a skillet over medium heat. When the onion begins to sizzle add a splash of soy sauce and sauté until onions are translucent. Stir in carrot and cabbage and a splash of soy sauce and sauté for 1-2 minutes. Stir in daikon and a splash of soy sauce. Add seitan and corn and spread veggies evenly over skillet. Cover with mochi slices and add a tiny bit of water to steam. Cover and cook on low heat until the mochi has melted and spread over veggies. Serve immediately.
