Mighty Tasty Tempeh Sandwich

Sandwiches are limited only by what you can imagine putting between those two slices of gorgeous whole grain bread. In this baby, we pack on protein with fermented tempeh, lightly cooked in olive oil and soy sauce; smother it with hummus and top with sautéed greens and kimchi to make a feast.

Makes 2 sandwiches

Ingredient List:

  • 1, 8-ounce package of tempeh, sliced in half crosswise and split into 4 thin slabs
  • Extra virgin olive oil
  • Soy sauce
  • ½ red onion, sliced into thin half-moon slices
  • 3-4 leaves lacinata kale, sliced thinly
  • 4 slices toasted whole grain bread
  • Hummus, store bought or home made
  • Kimchi, store bought or home made

Step By Step Instructions:

Slice the tempeh. Place oil to cover the bottom of a skillet along with a generous splash of soy sauce over medium heat. Place tempeh in the pan and cook, turning after 2 minutes to evenly brown both sides. Set aside.

In the same pan, add red onions and cook, stirring until they just wilt. Stir in kale and cook, stirring until just limp, about 1 minute.

To make the sandwiches, lay 4 slices of bread on a dry work surface. Spread hummus on all four slices of bread. Lay tempeh on the bread, 2 slices per sandwich. Top with kimchi and finally mound sautéed greens on top. Press the other slices of bread on the filling, slice in half and serve.
