Lemon-Lime Hummus/Roasted Pepper Wraps

Sure, you can buy store-bought hummus and use it for this wrap. Just add some lemon and lime juice and it should be just fine…but making your own hummus is easy, inexpensive and allows you to be creative with the flavors.

Makes 4 whole wraps, 8 half wraps

Ingredient List: 

4 whole grain wraps
1 recipe Lemon Lime Hummus (see recipe here)
Several leaves romaine lettuce
1 jar roasted red peppers, sliced into thick pieces
1 tomato, seeded, finely diced
1 cup sprouts

Step By Step Instructions: 

Lay wraps on a dry, flat work surface. Spread hummus evenly on each wrap, leaving about one half inch around the perimeter uncovered. Lay a large lettuce leaf on hummus and top with roasted peppers and tomatoes to taste. Drop some sprouts on each wrap. Roll the wraps, jelly roll style, into tight cylinders.
