Kimchi Slaw

A simple side dish that is loaded with anti-inflammatory compounds and is oh, so spicy good. You’ll never make this classic side dish in the same way again.
Makes 2-3 servings
Ingredient List:
- ½ cup each shredded green and red cabbage
- ½ cup kimchi
- Generous splash soy sauce
- Generous splash apple cider vinegar
- ¼ cup vegan mayo substitute
Step By Step Instructions:
For this recipe, you can lightly blanche the green and red cabbage or use it raw. If you blanche it (to ease digestion), blanche the green cabbage first or the red will turn everything purple.
Mix together the cabbages, the kimchi and add a generous splash each of soy sauce and apple cider vinegar. Stir in vegan mayo and mix to coat the ingredients.
Serve at room temperature or chilled.
