Italian Rice Pudding

I love rice pudding. Since I was a kid, my family knew that if they wanted to get me to eat something even remotely nutritious, go with rice pudding. This is my version and it’s truly yummy.

Makes 2-3 servings

Ingredient List:

  • ½ cup Carnoroli or Arborio rice, do not rinse
  • 3 cups unsweetened oat milk
  • 1/3 cup brown rice syrup (more to taste)
  • 1/3 cup golden raisins
  • Generous pinch ground cinnamon
  • Grated zest of 1 orange
  • Pinch sea salt
  • Juice of 1 orange
  • ½ cup slivered almonds

Step By Step Instructions:

Combine all ingredients (except orange juice and almonds) in a saucepan and bring to a boil over medium heat. Reduce heat to low and cover. Cook, stirring frequently, until the rice is creamy and the milk is absorbed, about 25-30 minutes.

Remove from heat and stir in orange juice. Spoon into individual cups and garnish with almonds right before serving. Serve warm.
