Hail Caesar Salad

An extremely popular salad to serve with pizza, my version has no saturated fats added and yet tastes just as rich and delicious as the original recipe.
Makes 3-4 servings
Ingredient List:
Dressing:
- ½ brick silken tofu
- 2 tablespoons stoneground mustard
- 1 teaspoon brown rice syrup
- ½ sheet toasted sushi nori, finely shredded
- 2 cloves fresh garlic, finely minced
- Sea salt
- Juice of 1 fresh lemon
- Extra virgin olive oil
Salad:
- 1 head Romaine lettuce
- 3-4 slices whole grain bread, cubed, baked or pan-fried into croutons
Step By Step Instructions:
Place all dressing ingredients in a food processor or blender, seasoning with sea salt to taste. Puree until smooth, slowly adding oil to achieve the consistency you want for the dressing. You want it to be smooth and thick.
Toss lettuce and croutons with dressing and serve immediately.
