Green Papaya Salad

Green papaya can be difficult to find and sadly, this salad is not the same with substitutions. A trip to any Asian market is very likely to yield the fruit you are looking for…and it’s worth the search.

Makes 4-5 servings

Dressing:

  • 1-2 tablespoons brown rice syrup
  • Juice of 1 fresh lime
  • 1-2 tablespoons organic soy sauce
  • 1 teaspoon avocado oil

Salad:

  • 2 cups shredded green papaya
  • 6-8 green beans, ends trimmed, split lengthwise
  • 5-6 cherry tomatoes, halved
  • 1-2 chili peppers, seeded, finely shredded
  • 2-3 tablespoons roasted organic or Valencia peanuts, coarsely chopped

Whisk together dressing ingredients. Adjust seasoning to your taste.

Combine salad ingredients, except peanuts and toss with dressing to coat. Transfer to a serving bowl and sprinkle with peanuts.
