Green Papaya Salad

Green papaya can be difficult to find and sadly, this salad is not the same with substitutions. A trip to any Asian market is very likely to yield the fruit you are looking for…and it’s worth the search.
Makes 4-5 servings
Dressing:
- 1-2 tablespoons brown rice syrup
- Juice of 1 fresh lime
- 1-2 tablespoons organic soy sauce
- 1 teaspoon avocado oil
Salad:
- 2 cups shredded green papaya
- 6-8 green beans, ends trimmed, split lengthwise
- 5-6 cherry tomatoes, halved
- 1-2 chili peppers, seeded, finely shredded
- 2-3 tablespoons roasted organic or Valencia peanuts, coarsely chopped
Whisk together dressing ingredients. Adjust seasoning to your taste.
Combine salad ingredients, except peanuts and toss with dressing to coat. Transfer to a serving bowl and sprinkle with peanuts.
