Fresh Pineapple Poached in Cinnamon Syrup

A light, yet satisfying dessert…just perfect at the end of a rich, hearty meal or during hot summer weather when you just want something sweet and juicy…or you don’t want to fall asleep as the evening heats up.
Makes 5-6 servings
Ingredient List:
- 1 ½ cups spring or filtered water
- ¾ cup brown rice syrup
- 3 cinnamon sticks, snapped in half
- pinch sea salt
- 5-6 thin slices fresh ginger
- ½ fresh lemon, halved
- 1 large pineapple, peeled, halved lengthwise, quartered, core removed, ¾-inch thick slices
Step By Step Instructions:
Combine water, rice syrup, cinnamon sticks, salt, ginger and lemon chunks in a large, heavy saucepan and place over medium heat. Cover and bring to a boil, reduce heat to low and cook for 10 minutes to develop the flavors. Add pineapple pieces, cover and cook over low heat, stirring occasionally, until pineapple is translucent, about 7 minutes.
Transfer pineapple and syrup to a bowl and refrigerate until chilled through, about 2 hours. Serve pineapple slices in individual dessert bowls, with chilled syrup over top, garnished with fresh mint or seasonal berries.
