Fresh Fava Bean Saute

This dish is the epitome of spring when fresh fava beans are at their peak of freshness. It’s just so yummy and quick to make, ensuring you have more time outdoors. And with its delicious pack of protein, you’ll have all the energy you need.
Makes 2-3 servings
Ingredient List:
- Extra virgin olive oil
- 3-4 shallots, thinly sliced
- Sea salt
- 2 cups fresh fava beans (2 cups beans after shelling)
- 2 cups halved cherry tomatoes
- Cracked black pepperr
Step By Step Instructions:
Place a generous glug of olive oil in a deep skillet with shallots over medium heat. When the shallots begin to sizzle, add a pinch of salt and cook, stirring for 1-2 minutes. Add fava beans, a pinch of salt and cook, stirring until they turn bright green, 3-4 minutes. Stir in cherry tomatoes, a pinch of salt and a crack of black pepper and cook, stirring until the tomatoes begin to wilt, about 2 minutes. Serve hot or chilled with a side of roasted potatoes.
