Decadent Nutty Chocolate Fudge

Who doesn’t love fudge? Who doesn’t hate what fudge can do to your waistline? In this recipe, we combine dark chocolate with spices to make the chocolate taste more chocolate-y, creating the healthiest fudge you will ever enjoy . . . yum!
Makes 8–10 pieces
Ingredient List:
- 1 cup raw cashews
- ¼ cup unsweetened cocoa powder
- Pinch sea salt
- Scant pinch ground cinnamon
- Scant pinch chili powder
- Scant pinch cracked black pepper
- ⅓ cup brown rice syrup
- 2 tablespoons cold vegan buttery spread
- ½ teaspoon pure vanilla extract
- ½ cup coarsely chopped walnut pieces
Step By Step Instructions:
Place cashews in a food processor and puree until a dense “butter” forms (it will look like Play-Doh). Add cocoa, salt, and spices and puree again. Add syrup, buttery spread, and vanilla and puree until thick and smooth. It will become a ball in the processor.
Transfer to a dry work surface and knead the walnuts into the fudge mixture. Shape mixture into a 1-inch- thick square; wrap in plastic and chill for about 3 hours before cutting into squares.
Cook’s Tip: For a softer, creamier fudge, soak cashews for 4 hours and drain well before using in recipe.
