The Cancer Fighter

This miso soup brings together all the ingredients you need to fight the good fight to prevent…and yes, even treat cancer.

Makes 3-4 servings

Ingredient List: 

1 small yellow onion, diced
2 tablespoons wakame, soaked, diced
4 cups spring or filtered water
1 dried maitake mushroom, broken into bite-size pieces
1 cup diced green cabbage
½ cup diced daikon
4 teaspoons barley miso
2 scallion, finely sliced for garnish

Step By Step Instructions: 

Place onion, wakame and water in a soup pot over medium heat. Bring to a boil, uncovered. Add balance of vegetables, cover and return to the boil. Reduce heat to low and cook for 7-10 minutes. Remove a small amount of hot broth and dissolve miso. Return to soup and stir. Simmer, without boiling for 1-2 minutes. Serve hot, garnished with scallions.
