Apple-Spiced Coffeecake

Tartlets, strudels, kantens and custards laden with fresh fruit are a tasty addition to any table. But my favorite, really, is coffeecake. And this one, well…
Makes 1 Cake, 6-8 Servings
Ingredient List:
- 1 recipe Sure-Fire Basic White Cake batter
- 2 ripe apples, seeded and diced, do not peel
Topping
- 5 tablespoons coconut sugar or maple syrup granules
- 3 tablespoons walnuts, minced
- Generous pinch ground cinnamon
- 2 to 3 tablespoons avocado oil
Step By Step Instructions:
Preheat oven to 375F (190C). Oil and flour an 8-inch round cake pan. Prepare cake batter and fold in the apples. Take care not to overmix, or cake will become tough. Spoon batter evenly into the cake pan.
Prepare topping: Combine coconut sugar or maple syrup granules, walnuts, cinnamon, and oil in a small bowl to create a crumbly texture. Sprinkle topping over cake. Bake 35 to 40 minutes, until the top is golden and a wooden pick comes out clean when inserted in the center of the cake. Allow to cool in pan 10 minutes before turning out. Serve warm.
