Almond Ricotta on Toasted Bread

If you love ricotta, you will love this vegan version of ricotta. While I am not a fan of faux cheeses, I loved this particular snack that my Nonna used to make after school. So here is my version.

Ingredient List:

  • Makes 5-6 servings
  • 2 cups soaked slivered almonds (soak for at least 1 hour)
  • 1 cup water
  • 2 tablespoons white miso
  • 3 cloves garlic, coarsely chopped
  • Juice of 1 lemon

Step By Step Instructions:

Place almonds and water in a blender or food processor and puree until chunky smooth. Stir in miso and lemon juice and puree until blended well. Turn into a bowl and use to stuff shells or in other pasta dishes.

Cook’s Tip: you can eliminate the miso and garlic and make this a sweet ricotta with a bit of rice syrup and vanilla and use in desserts.
