Over the years, I've tried a number of 'green' non-stick pans, yet regardless of the price or brand name, they simply didn't last.
Their non-stick properties deteriorate with use and there are some potential health issues associated with traditional non-stick pans with the breakdown of the compounds used in their manufacture. Two of the chemicals that are cause for concern are PFOA (perfluorooctanoic acid) and PTFE (polytetrafluoroethylene).
PFOA is a chemical processing agent used in the manufacture of nonstick cookware (and many other products). The Environmental Protection Agency has detected it in water, food, and both wildlife and human blood samples. PFOA has been found to cause birth defects in laboratory animals and the EPA has instituted a stewardship program to eliminate its use entirely.
PTFE is a moisture-repelling chemical that when heated over high heat releases fumes that can actually kill birds and cause flu-like symptoms in people. Yikes!
Kyocera Ceramic-Coated Cookware
The ceramic-coated cookware line from Kyocera is free of both PFOA and PTFE as well as cadmium, an element found in the coloring agents of some brands of ceramic cookware. Being long-time fans of Kyocera's ceramic knives, I was anxious to give their cookware a try when it became available here in the United States...and I love these pans.
