And now for something totally different, Christina Cooks and the International Macrobiotic Institute (IMI) bring you Aurora Spirit Quest. Christina and Robert Pirello, along with Edward and Naomi Esko have joined together to offer you a spiritual quest like no other, a visit to Fairbanks, AK, arguably the most popular destination for visitors who want to see and experience the Northern Lights.

OUR RESORT

We’ll be staying at the Wedgewood Resort in Faribanks, AK. Tucked away on 105 acres surrounded by a 75-acre wildlife sanctuary and a 2,000-acre migratory waterfowl refuge, Wedgewood Resort is the ideal place to experience the natural beauty Fairbanks, Alaska has to offer. Enjoy the quiet, seclusion and breathtaking scenery along with the convenience of being minutes from downtown shopping, attractions and cultural events.

OUR ITINERARY

Alaska seems to be one of those destinations on most everybody’s bucket list...and we’ll do it all. Weill visit the famous Chena hot springs for a dip or two in the rejuvenating baths; of course we’ll spend several evenings chasing the aurora borealis, the northern lights; and we’ll visit the North Pole (perhaps run into jolly old Saint Nick himself). And if that’s not enough for you, how about a visit to the iconic Arctic Circle and famous Dalton Highway, and on up to the mighty Yukon River. Of course there’ll be ice carving displays, museums and let’s not forget the our visit to Denali National Park for an excursion into the park for wildlife viewing, a short natural history hike and visit to the Park dog kennels.

In addition to the sightseeing aspects of this amazing adventure, there will be a very important educational component, including macrobiotic lectures, meditations and spiritual practices with the Esko’s and Pirello’s.

THE FOOD

I hope you know me well enough to know that my crew and I will be dishing up the best Alaska has to offer in our own kitchen, for two meals daily. Our luscious plant-based feasts are supplemented by one meal eaten in the city we are visiting on any given day; (and yes it is all inclusive). Robert and I have planned delicious menus to be enjoyed as we take in the magnificent views of this magical, mystical country.
