In late 2003, on a trip to the north-central region of
China (famous for cultivating gloriously flavorful Fuji apples), Angela Liu,
founder of ‘Crispy Green,’ tasted some amazing freeze-dried apples
and was hooked. ‘The apples were so light and crisp and at the same
time, had the most fresh and true apple taste,’ she said. ‘Right
then, we knew we had a gift from Mother Nature and we had to bring this perfect
snack back home so others could enjoy it.’
And so she did. In August, 2004, ‘Crispy Green’ was founded with
the mission to ‘provide delicious and wholesome snacks using the best
natural ingredients with no artificial flavor enhancement.’ Teaming
up with one of the largest freeze-drying processors in China, Liu has created
a line of sophisticated freeze-dried fruit snacks with a process that removes
water from fresh fruit in a freezing vacuum condition, which leaves behind
and intensely flavored fruit in a light and crisp, chip-like texture.
While freeze-dried fruit has been around for some time, mostly in a rubbery
form in trail mix or in cereals, I had not tasted or seen anything quite like
Crispy Green. The first time I sampled ‘Crispy Green’ peaches,
I popped a couple of chips into my mouth. What I expected and what I got was
like night and day. The flavor of the peaches was so intense and true. The
texture was light as air and as crisp as any chip. These peach chips were
as rich as any exotic dessert I had ever tasted. I couldn’t wait to
try all three flavors…and did…at that moment…Crispy Apples,
Crispy Apricots and of course, Crispy Peaches. Each one was like biting into
a light, crisp chip of fresh, delicious fruit. Cool!
I looked more closely at the package…no fat, no cholesterol, natural
fiber and nutrients intact, no sugars added, no artificial anything…and
between 35 and 40 calories a serving (a whole package). Nothing was in this
snack treat, but fruit…fresh, freeze-dried fruit. Not too good to be
true, after all…a truly natural snack. I knew I wanted to share this
