Pancakes - Series 6
What You'll Need
1 cup whole wheat pastry flour
1 teaspoon baking powder
1 pinch sea salt
1 cup vanilla soymilk
1 teaspoon umeboshi vinegar
1 tablespoon olive oil
Instructions
Whisk the dry ingredients very briskly for about one minute. Whisk wet
ingredients, blending well. Mixed wet ingredients into dry, whisking
briskly for one minute, adding soymilk, as necessary to create a spoonable
batter.
Lightly oil a griddle and warm over medium heat. Spoon batter onto hot
grill by 1/4 cup and cook until golden. Flip each pancake and cook until
golden. Makes ten pancakes.
Variation-use 3/4-cup whole pastry flour and 1/4 cup spelt flour, cornmeal
or buckwheat flour to create variations of the basic pancake.
