Falafel With Hummus And Sesame Sauce - Series 6

What You'll Need
3 cloves garlic -- minced
3 cups chick peas -- cooked
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon paprika
1 teaspoon turmeric
2 teaspoons sea salt
2 scallions -- minced for
1/4 bunch fresh flat leaf parsley -- minced
1 cup whole wheat pastry flour
4 tablespoons sesame tahini
1 lemon
1 teaspoon brown rice syrup
1 head romaine lettuce -- shredded
1 package whole wheat pita

Instructions
Make hummus. Add scallions and parsley. Transfer mixture to a boil and add enough flour to create a dough that sticks together when formed, but not too dry. Shape into 1 1/2 inch balls.
Fry the balls.
Whisk together the dressing ingredients until smooth. Adjust the seasonings.
Place a pita work surface. Release three falafel in the center of the peanut, top with lettuce, spoon hummus over top and finally sesame dressing.
