Cucumber Wakame Salsa - Series 6
What You'll Need
1/2 cup wakame seaweed -- soak until soft
2 cucumbers -- finely diced
5 radish -- finely diced
1/2 red bell pepper -- julienne
1/2 pound plum tomatoes -- diced
3 scallions -- minced
2 teaspoons umeboshi vinegar
2 teaspoons brown rice vinegar
juice of each– 1 orange, lime, lemon
1 teaspoon soy sauce
1 teaspoon mirin
3 cups spring mix
Instructions
Combine the wakame, cucumbers, radishes bell pepper, plum tomatoes and
scallions in a mixing bowl. Whisk together the vinegars, citrus juices,
soy sauce, mirin a small bowl adjust the seasonings to your taste. Stir
dressing into vegetable mixture and toss to combine. Set aside to marinate
for at least one hour before serving to allow flavors to develop. Serve
at room temperature.
Arrange greens on a plate and spoon salsa over the top.
