Coucou With Spicy Tomato Sauce - Series 6
What You'll Need
5 cups water
3 okra -- minced
1 cup corn grits
1 pinch sea salt
1/4 cup extra virgin olive oil
3 cloves garlic -- thinly sliced
1 red onion -- diced
1 pinch crushed red pepper
8 plum tomatoes -- diced
1/4 bunch fresh basil -- leave is removed, shredded
Instructions
Place the water and okra in a large pot and bring to a boil. Whisk in
the corn grits and return to a boil, whisking constantly. Reduce the
heat to low and cook, or whisking frequently until wrecking creamy,
about 30 minutes.
To make the sauce, place a small amount of oil, garlic and onions into
deep skillet and turn heat to medium. When the onions begin this is
a, and red pepper flakes of salt and sauté for one minute. Stir
in the tomatoes, season lightly with salt, at about 1 cup of water and
cook uncovered stirring frequently until tomatoes are quite soft, about
25 minutes. Season to taste and stir in basil.
To serve, place corn mixture in individual bowls and spoon sauce over
top.
