Cantaloupe Soup With Blueberries - Series 6
What You'll Need
1 each peach -- peel, seed, dice
1 each cantaloupe -- peel, seed, dice
1 cup apple juice
1 pinch sea salt
1 each lemon -- juiced
1 teaspoon vanilla extract
4 sprigs mint
1 tablespoon blueberries
Instructions
Combine peaches, melon, apple juice in pot.
Cover, cook for 10 minutes.
Remove, puree in processor until smooth.
Stir in lemon and vanilla, mix.
Place in bowl, cover and chill for 2 hours.
Garnish with mint and berries.
