Studying plant-based nutrition for many years, with many different doctors and experts, reading different books, and experimenting with my own diet and lifestyle has shown me many things. And it's confirmed how drastically our health in this country has declined.  A diet full of chemicals and fake food, an animal-centered diet high in fat, our complete lack of exercise, an over-consumption of sugar and processed food are just some of the offenders. But there isn’t one culprit that we can pinpoint as the bad guy.

Some well-known plant-based doctors would like you to be fanatical about your diet. I would even say extremist. If you have a certain health condition like heart disease, cancer, obesity, or diabetes your diet needs to be restrictive as part of the healing process. But for those of you who are already eating a healthy plant-based diet rich in a variety of whole grains, vegetables, legumes, etc. it doesn’t serve you or your health to latch on to someone else’s dogma and make it your own. How healthy can that be for you? I in no way want you to compromise your health, but we must remain flexible, fluid, and realistic in our daily choices.

Here is a delicious Summer salad that you can enjoy and not feel guilty about!

Avocado, Strawberry, & Grape Tomato Salad
Strawberries are the most popular berry in the world. They go great in salads and as a compliment to a savory dressing like balsamic vinaigrette like in this recipe.

1 head butter lettuce, leaves torn or chiffonade
2 avocados
1 medium carrot, thin julienne
10 grape tomatoes, halved or quartered
6 strawberries, ends cut off and sliced
1 cup yellow pepper, thinly sliced

Balsamic Vinaigrette
1 tablespoon olive oil
¼ cup balsamic vinegar
¼ cup fresh lemon juice
2-3 teaspoons maple syrup
¼-½ teaspoon sea salt
½ teaspoon black pepper
1 clove fresh garlic, sliced (optional)

Blend dressing ingredients in a blender or whisk by hand. Toss salad ingredients together with vinaigrette right before serving.
