The New Year is well on its way to being just another year and many of us still feel ‘hung over’ from the holidays: too much indulging, too little sleep and exercise have taken their toll on our bodies. By now many people's resolutions to get fit and healthy have fallen to the wayside. It’s time to get back on track (or on track in the first place), stay warm in the cold weather (lots of shivery days ahead) and energize our lives once and for all.
This is a hearty meal that's sure to keep you warm on those cold winter nights. And if you don't have time to cook your black beans from scratch, feel free to used canned beans, but be sure to buy organic. Add some simple steamed kale or collard greens and you've got a meal that will satisfy the hungriest of appetites. Enjoy!
