Stir-Fried Shanghai Bok Choy
This spicy bok choy dish is a great side dish that stimulates circulation and creates vitality.
2-3 tablespoons avocado oil
2-3 cloves fresh garlic, thinly sliced
1 teaspoon finely minced fresh ginger
generous pinch crushed red pepper flakes
5-8 baby bok choy, rinsed well, stem tips trimmed, quartered
Mirin or sweet white wine
Toasted sesame oil
Place oil, garlic, ginger and red pepper flakes in a skillet and turn heat to medium. As soon as the garlic begins to sizzle (do not burn), add a pinch of salt. Arrange bok choy in skillet. Season lightly with salt and sauté until greens wilt and turn a deep green, about 5 minutes. Drizzle with mirin or wine and cook, stirring for 1 minute more. Transfer to a serving platter, drizzle lightly with sesame oil and serve immediately.
Makes 3-4 servings.
