Spicy Peanut Noodles
This spicy noodle dish is like revenge...best served cold...just kidding. When this dish is served chilled, the creamy nature of the sauce shines.
8 ounces udon noodles
1/2 cup peanut butter
1 teaspoon brown rice syrup
1 lemon, grated zest, juice
2 teaspoons fresh ginger juice
1/4 cup boiled peanuts, minced
2 scallions, thinly sliced diagonally
Bring a large pot of salted water to a boil and add the noodles. Return the water to a boil and add 1 cup of cold water. Return water to a boil and add another cup of water. Return water to boil the third time. When the water boils the third time, noodles are done. Drain and rinse well. Set aside.
Process the peanut butter, rice syrup, soy sauce, lemon juice and zest, ginger juice and peanuts in a blender or food processor until smooth. Toss cooked noodles with sauce and serve garnished with scallions.
