Sauteed Vegetable Foccaccia

extra virgin olive oil
2-3 cloves fresh garlic, thinly sliced
1 red onion, thinly sliced into half moon pieces
sea salt
generous pinch crushed red pepper flakes
1 zucchini, thin matchstick pieces
1 yellow summer squash, thin matchstick pieces
4-5 ripe tomatoes, thinly sliced, do not seed or peel
1 small bunch broccoli rabe, rinsed well, finely cut
1 store bought whole wheat foccaccia

Place a small amount of oil, garlic and onion in a deep skillet and turn heat to medium. When the onions begin to sizzle, add a pinch of salt and the red pepper flakes and sautT for 2 minutes. Stir in zucchini and yellow squash, a pinch of salt and sautT for 2 minutes. Stir in tomatoes, broccoli rabe and season lightly with salt. Saute until greens are limp and tender. 

To serve, warm the foccaccia in the oven for 5-6 minutes. Cut into squares and mound vegetables on each square. Makes 6-8 squares.
