Roasted Winter Squash

This simple side dish is sweetly satisfying, warming, and comforting.  Loaded with antioxidants and carotenoids and requiring little prep, this dish just needs the time to bake and you are on your way.  Relaxing to the spleen, stomach, and pancreas, this dish can help you manage sweet cravings. 


1 small winter squash, halved, seeded, cut into 1-inch cubes
Extra- virgin olive oil
Sea salt
Cracked black pepper
Juice of ½ fresh lemon

Preheat oven to 375°. Cut squash and arrange it in a shallow baking dish, avoiding overlap, if possible. Drizzle generously with olive oil and season to taste with salt and pepper. Toss to coat. Cover tightly with foil. Bake for 45 minutes. Remove cover and return to oven for 10 minutes more.

Drizzle with lemon juice just before serving.

Makes 3–4 servings
