Roasted Winter Squash
Ingredients
1 small winter squash, halved, seeded, cut into 1-inch cubes
Extra- virgin olive oil
Sea salt
Cracked black pepper
Juice of ½ fresh lemon
Directions
Preheat oven to 375°. Cut squash and arrange it in a shallow baking dish, avoiding overlap, if possible. Drizzle generously with olive oil and season to taste with salt and pepper. Toss to coat. Cover tightly with foil. Bake for 45 minutes. Remove cover and return to oven for 10 minutes more.
Drizzle with lemon juice just before serving.
Makes 3–4 servings
