Poached Pears with Chocolate Sauce

Simple, elegant and smothered in chocolate...the perfect dessert.

2 pears, peeled, left whole 
spring or filtered water 
2-3 tablespoons brown rice syrup 
2 cinnamon sticks 
zest of 1 lemon 
pinch sea salt 

1/4 cup unsweetened almond or soy milk 
3 tablespoons brown rice syrup 
1 cup grain-sweetened, non-dairy chocolate chips 

Cut a thin slice off the bottom of the pears, so they stand flat on their end. Add water to cover pears completely. Add rice syrup, long thin ribbons of lemon rind (cut the yellow rind off the lemon with a sharp knife, not a zester), cinnamon sticks and salt. Cover and bring to a boil. When the pears boil, turn off heat and allow to cool room temperature, covered. 

The pears will be perfectly poached. Prepare the glaze by bringing milk and rice syrup to a boil. Pour over chocolate chips and whisk to silky smooth consistency. To serve, place pears on individual dessert plates and drizzle chocolate glaze over top to coat.
