Print ThisPenne with Shiitake Mushrooms
I love this pasta dish...and not only because it's delicious, but because the shiitakes help to relax muscle tension and break down fat. A win-win for our health.
Ingredients
2 tablespoons light olive oil
1 yellow onion, thin half moon slices
1-2 cloves fresh garlic, finely minced
sea salt
6-8 dried shiitake mushrooms, soaked until tender, stems removed, thinly
sliced
1 small zucchini, fine match stick pieces
2 tablespoons mirin or white wine
8 ounces penne, cooked al dente
Directions
Heat oil in a skillet and saute onion and ginger, with a generous pinch of salt. Stir in shiitake, and zucchini, a light seasoning of salt and the mirin. Add 1/4 cup water, cover and cook over low heat for about 10 minutes, until the shiitake are tender. To serve, mound noodles on a platter and spoon vegetables over top. Garnish with fresh parsley or basil.
