Pasta with Hemp Pesto

Adding hempseeds to this pesto ups the ante on nutrition in this most delicious pasta main course.

3 cups loosely packed fresh basil leaves
1/2 cup fresh parsley
5 cloves fresh garlic, thinly sliced
1/2 cup hemp seeds
1/4 cup pine nuts
3/4 cup oil-packed sun-dried tomatoes
2 teaspoons sweet white miso
1/2 cup extra virgin olive oil
1 teaspoon red wine vinegar
1 pound penne pasta
whole basil sprigs, for garnish

Combine basil, parsley and garlic in a food processer and puree. Add hemp seeds, pine nuts and sun-dried tomatoes and puree until smooth. Add balance of ingredients and puree until quite smooth. If the pesto is too thick, add a small amount of water and puree.

Bring a pot of water to a boil and cook pasta al dente. Drain well, but do not rinse. Mix pesto into noodles to coat and transfer to a serving platter. Serve garnished with fresh basil sprigs. 

Makes 4-6 servings.
