Print ThisOnion Soup with Melted Mochi
This is a lovely cold weather soup. In the fall and winter, this hearty soup will keep you warm and cozy, no matter how dreadful the weather.
Ingredients
Extra virgin olive oil
2-3 red onions, thin half moon slices
Sea salt
Cracked black pepper
4 cups spring or filtered water
1/4 package mochi, cut into squares
2-3 sprigs flat leaf parsley, coarsely chopped
Directions
Place oil and onions in a soup pot over medium heat. When the onions begin to sizzle, add a pinch of salt and sautee until lightly browned, about 35 minutes. Add water; bring to a boil; reduce heat to low and simmer for 20 minutes. Season to taste with salt and stir in mochi. Simmer, stirring occasionally until the mochi melts, about 5 minutes. Serve garnished with parsley.
Makes 3-4 servings.
