I know what you're thinking. Seriously? Noodles wrapped in sea veggies with peanut butter and pickles inside? Ya' gotta try this to believe it.
8 ounces soba noodles -- cooked
3 sheet nori
1 jar peanut butter
1 jar dill pickles
1 package pickled ginger
Form small bundles of noodles, tie off ends (using cotton kitchen string) as close to the tips of the noodles as possible. Bring a pot of salted water to a boil. Carefully place the tied noodles into boiling water. Cook al dente. Drain and rinse well. Arrange the noodles so they are laying lengthwise. Cut off the ends where they have been tied. lay the noodles across nori (as you would press rice). Spread peanut butter along the edge of the noodles closest to you. Lay pickles on top of peanut butter, the length of the nori. Roll as you would a jelly-roll, carefully wrapping the noodles and nori around the filling. Slice into 8 equal pieces and serve with a small sliver of pickled ginger on each piece. Makes 24 pieces.
