Frank’s Veggie Steak Sandwich
In true Philadelphia tradition, Frank Olivieri, owner of Pat’s Steaks, the creator of the Philly Cheesesteak, Frank came up with this veg version that is just as satisfying…and kinder to your heart…yo!
Makes 2 sandwiches
Extra virgin olive oil
2 yellow onions, half moon slices
1 red bell pepper, halved, seeded, sliced into ribbons
1 green bell pepper, halved, seeded, sliced into ribbons
2 portobello mushrooms, cleaned, thickly sliced
Cracked black pepper
2 whole grain hoagie rolls
Place a small amount of olive oil and onions on a griddle or skillet over medium heat. When the onions begin to sizzle, add a pinch of salt and sauté until the onions wilt, about 3 minutes. Stir in peppers, a pinch of salt and sauté until they wilt, about 2 minutes. Stir in portobellos and a pinch of salt and sauté until they are soft, about3-4 minutes. Season to taste with salt and pepper and sauté for 1 minute.
While the peppers sauté, slice the hoagie rolls in half, but not all the way through. Press them gently open and brush the cuts sides with olive oil. Lay them, cut side down in a hot skillet and toast them until the edges are lightly browned.
To make the sandwiches, press the toasted rolls gently open and mound half the filling in each. Serve hot.
