Bo-Bo-Bolognese Sauce

People love meat sauce. Meat sauce doesn’t love people’s hearts. What are we to do? Make this easy-to-make, richly flavored sauce and everyone’s tickers and tummies will rejoice. 


2 tablespoons extra-virgin olive oil
2 cloves fresh garlic, minced
1 red onion, diced
Sea salt
Cracked black pepper
Generous pinch dried oregano
1 cup coarsely chopped seitan
1 (28-ounce) can crushed tomatoes
2 tablespoons tomato paste
1 bay leaf
2–3 sprigs fresh flat-leaf parsley, coarsely chopped
10 ounces whole- wheat spaghetti (If your family doesn’t like whole- wheat pasta, use semolina pasta.)

Place oil, garlic, and onions in a sauce pan over medium heat. When the onions begin to sizzle, add a pinch of salt and pepper and sauté for 2–3 minutes. Add oregano, seitan, tomatoes, and tomato paste. 
Stir well to combine. Add bay leaf, cover, reduce heat, and cook for about 15 minutes. Season to taste with salt and simmer for 5 minutes more. Remove the bay leaf.
While the sauce cooks, bring a pot of water to a boil with a generous pinch of sea salt. Cook the spaghetti al dente, 8–9 minutes. Drain and transfer right to the sauce. Mix well to combine. Stir in parsley and serve immediately.
Makes 3–4 servings over pasta
